  1. Sear the lamb – Brown lamb chunks on all sides for rich, caramelized flavor.

  4. Pressure cook – Layer beancurd sheets with soy sauce, rock sugar, and water, then cook on high for 50 minutes + 25-minute natural release.
  5. Make dipping sauce – Fermented bean curd, sugar, sesame oil, & a splash of hot water combine into a creamy, addictive dip.
  6. Finish & serve – Stir in green scallion, adjust seasoning, & serve with dipping sauce on the side.

What You’ll Need:

  • 2 × 180 g (6 oz) salmon fillets
  • 1tsp grated ginger, 1 garlic clove (crushed)
  • 1Tbsp soy sauce
  • 2Tbsp oyster sauce
  • 2Tbsp sweet chili sauce
  • Sesame seeds + scallions to garnish
  • Sides: steamed rice and greens

Method

  1. Marinate salmon fillets in the flavorful glaze for at least 30 minutes (or overnight for extra depth).
  2. Broil on high (~25cm / 10’’ from heat) for 7 minutes; then spray with oil & broil 1–3 minutes more until the glaze caramelizes & salmon flakes.
  3. Serve hot with sesame seeds, scallions, steamed greens, & rice.
